Besan Sev and Besan Bhujia is one of the traditional Indian snacks, made with chana dal flour (besan). Sev is prepared by kneading gram flour with spices and frying it in oil with a machine or Jhara in the form of thin tubes. Its taste is mildly spicy, crisp and very wonderful. Besan Sev can be eaten alone, or else used as a topping on chaat, Sev puri, upma, poha etc. It can be stored for a long time and is also popular as a travel snack. The same bhujia is made by mixing gram flour, chili, asafoetida, salt and other indigenous spices and kneading it like a dough and frying it in hot oil from the Jhara. The texture of bhujia is fine and crispy, and its pungent spicy flavour makes it the perfect snack to be served with tea or with a meal. It is very popular not only in India, but also abroad.
